Sam’s Pickled Shrimp 2 ½ lbs Shrimp, fresh or frozen (15-20 count)½ cup Celery tops¼ cup mixed pickling spices3 ½ tsp salt2 cups onions, sliced7-8 Bay leaves1 ¼ cups Olive Oil¾ cups White Vinegar2 ½ Tbs capers w/juice2 ½ tsp Celery seed1 ½ tsp Tabasco Sauce Bring water to a rolling boil; add celery tops, pickling spices and salt. Add Shrimp. Cover and simmer for 5 minutes. Drain and cool with cold water or ice bath to stop cooking. Remove shell from shrimp under cold water. Alternate shrimp, onion in shallow dish or zip lock bag. Add bay leaves. Mix rest of ingredients and pour over shrimp. Cover and chill in the refrigerator for 1 – 7 days. Serve as is or with sauce.
