Sam’s Pickled Shrimp

2 ½ lbs Shrimp, fresh or frozen (15-20 count)
½ cup Celery tops
¼ cup mixed pickling spices
3 ½ tsp salt
2 cups onions, sliced
7-8 Bay leaves
1 ¼ cups Olive Oil
¾ cups White Vinegar
2 ½ Tbs capers w/juice
2 ½ tsp Celery seed
1 ½ tsp Tabasco Sauce

Bring water to a rolling boil; add celery tops, pickling spices and salt. Add Shrimp. Cover and simmer for 5 minutes. Drain and cool with cold water or ice bath to stop cooking. Remove shell from shrimp under cold water. Alternate shrimp, onion in shallow dish or zip lock bag. Add bay leaves. Mix rest of ingredients and pour over shrimp. Cover and chill in the refrigerator for 1 – 7 days. Serve as is or with sauce.
